Chicken Fajita Quesadilla

For my first visit, I really appreciated the atmosphere, the decor, and everyone was friendly and helpful. My eyes instantly went to the Fajitas Quesadillas. I thought “I love fajitas, and I love quesadillas…I wonder if it’s fajitas with a cheese quesadilla on the side?” Even better, the chicken fajita was stuffed inside of the tortilla! And let me tell you, the food was PIPING hot! Rice is at the top of the carb hierarchy for me, and their rice didn’t disappoint at all. It was fluffy, fresh, hot, and flavorful. A nice side salad with a big tomato slice and creamy guac really topped off this meal. I barely finished it!
It’s easy for me to fall into a habit once I find something I like. So, after a few weeks (months) of always getting the fajita quesadillas, I decided to try something different. I went with the Pollo Relleno, chicken breast topped with spinach and pico de gallo. Though I missed my fajitas, this hit a spot I didn’t even know I had! Like before, the food was fresh and piping hot. Also like before, I barely finished it. So, now I was certain that no matter what I tried, it was going to be delicious.
By this point, me and my partner are regulars and every time we visit, we’re always greeted with, “My friends!” This is also when they started bringing in new menu items to try out, and that’s never a bad thing in my book! So, I decided to get a little frisky and try something well outside of my usual palette - Birria Tacos. I try not to eat things that feel too heavy for me, but who am I to resist birria tacos? Not only did I try something new and enjoyed it, but I also realized the pro-strategy: don’t eat the entire basket of chips & salsa because you can have room for your actual meal! (so, ignore the empty bowl of salsa lol)

Mi Rancho GTO is a Mexican restaurant tucked away in a Winn Dixie shopping plaza. Funny enough, I stumbled upon Mi Rancho after wanting some quesadillas, but Tijuana Flats was closed that day (big thanks to the universe for guiding me here). Hands down, it was one of the best redirects I’ve ever experienced.

Whenever I’m in the mood for excellent Mexican food and a great experience, I always go to Mi Rancho GTO. The vibe is always welcoming and, as I rambled about before, the food is always on point! Sundays tend to get busy, just as a heads up (and yes, I know this from going almost every Sunday). It’ll be tough for me to break out of my go-to meals, but whenever something new is on the menu, I know it’ll be just as good!
